Have you ever witnessed a group of white, almost transparent, 30 somethings sitting around eating waffles and fried chicken and snorting their MD 20/20 through their nose as they watched and quoted Pootie Tang?
No?
That’s a right fucking shame.
I have a wonderful group of friends. A wonderfully brilliant and geeky and talented and twisted bunch, that, love to gather together to break bread and watch movies. We switched houses and movie genres. The invitation was always BYOB and enjoy whatever food was thrown at you.
One night was better than all the rest. Pootie Tang was the movie and we were going to do it up Blaxploitation style. Piles of fried chicken and waffles were available, buffet style, and glasses were readied for the 20/20. Half of us had never seen the movie and the other half was giggling before it even started.
We watched and ate and laughed. We discussed the movie and the writers and other films in the genre that we loved. We poked fun at ourselves for being so white and generally enjoyed each other’s company, and our mutual love for Blaxploitation in film, food and drink. All in all it was a great evening and I’ve thought about throwing a bash like this again. I’ve even created my own recipe for the occasion which I’m sharing with you here.

Waffle Fried Chicken, Sa Da Tay!

Ingredients
- 1lb Chicken ((Breasts or tenders))
- Waffle batter ((see recipe notes for some ideas))
- 1-2 cup Flour
- Oil ((peanut, vegetable or canola for frying))
Directions
Step 1. | Prepare your deep fryer or frying pan. If using a frying pan, fry in at least 2 inches of oil. |
Step 2. | Coat chicken in flour |
Step 3. | Dredge floured chicken in wet batter |
Step 4. | Coat chicken in flour again |
Step 5. | Drop chicken into readied deep fryer oil and fry until cooked. If your batter is done frying before your chicken, place chicken in baking dish and bake at 350 for 20 - 30 minutes until chicken is cooked. |

Here are some waffle batters you can use - or use your own favorite batter.
ie: Bisquick: 2 cups bisquick, 1 ⅓ cup milk, 1 egg
Mix bisquick, 1 ⅓ cup milk and 1 egg together for batter
ie: Aunt Jemima’s Whole Wheat Blend: 1 cup blend, 1 cup milk, 1 egg, 1tbs oil
Mix 1 cup blend, 1 cup milk, 1 egg and 1tbs oil together for batter
ie: Beer batter: 2 cups flour, 12oz beer, ½ cup butter, ¼ cup milk, 2 eggs (separated), 1tbs honey, 1tsp vanilla
Combine flour, beer, butter, milk, egg yolks, honey, and vanilla in a large bowl; stir until the mixture is smooth. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into batter.
ie: Homemade batter: 2 eggs, 2 cups flour, 1 ¾ cup milk, ½ cup vegetable oil, 1tbs sugar, 4tsp baking soda, 1/4tsp salt, 1/2tsp vanilla
Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until a smooth batter.
** Feel free to serve your dish with syrup, fruit relish/salsa, jams and jellies or anything else that tickles your fancy.
